This is a creamy homemade ice cream made with tender chunks of shortcake biscuits, strawberry sauce, and fresh berries. It is bursting with summer flavor! I have another recipe for strawberry shortcake ice cream bars made with bourbon if you're looking for another dessert idea to try. :)
This ice cream features chunks of shortbread, cream, strawberries and strawberry sauce.
You can make the strawberry sauce days in advance and store it in the fridge. It's amazing on its own too!
Make the shortcake biscuits, let them cool, then cut them into chunks.
Make the vanilla ice cream base. No ice cream maker needed!
Mix the biscuits into the vanilla ice cream base.
Pour the ice cream into a loaf pan, then add spoonfuls of sauce and swirl it in.
Add more biscuit pieces and fresh berries on top, then freeze your ice cream.
Let your strawberry shortcake ice cream freeze overnight for the perfect scoop.
Add a few scoops to a big bowl and grab yourself a spoon!
