What Are Strawberry Shortcake Ice Cream Bars?

These are a homemade version of the strawberry shortcake ice cream bars on a stick that you can usually find at ice cream trucks in the summer! I used homemade bourbon vanilla ice cream to add a subtle boozy kick, but you can use store bought ice cream too!

Make the Ice Creams

This is totally optional. You can also use ice cream from the store! I used bourbon vanilla ice cream and strawberry ice cream with fresh berries. 

Make the Crust

We're going to use golden Oreos to make a simple cookie-based crust. You can also use Nilla wafter or chocolate Oreo cookies.

Make the Topping

Combine some of the crushed cookies with some crushed freeze-dried strawberries. 

Assemble the Bars

Layer the cookie crust, vanilla ice cream, and strawberry ice cream in a baking dish.

Add the Topping

Sprinkle the topping all over the bars and then freeze them. 

Cut the Bars

Once frozen, cut the bars with a sharp knife.

Dig In!

Grab a knife or spoon, then dig into these homemade frozen treats!
