Made with pumpkin, tender apples and whole wheat flour, this easy recipe is pretty healthy! You can use applesauce instead of oil too.
No fancy ingredients here. These pumpkin muffins are made with pantry basics.
Combine all the wet ingredients in a bowl. Whisk together well.
Add the apple pieces to the wet ingredients and mix.
Mix together until no dry bits of batter are visible.
Pour batter into jumbo muffin tins. You can also use standard-sized muffin sizes.
The muffins are done when the tops spring back (careful they're hot!) or a tester comes out clean.
Serve with a pumpkin spice latte for double fall flavor!
