Onion soups have been popular for centuries and date back to the Roman era. It was often a preferred soup for the poor because onions were plentiful and easy to grow.  The modern version, however, originated in 18th-century France

What You'll Need

You'll need onions, vegetable broth and a few other simple ingredients.

Add Flour and Wine

These thicken the soup a bit and add extra flavor.

Simmer

Add the rest of the soup ingredients and simmer for 30 min.

Finish the Soup

Ladle into oven-safe ramekins, then top with toasted bread and some cheese. Broil until the cheese melts.

Dig In!

Grab a spoon and dig in. Breaking through the melty cheese and toasted bread to get the soup is heaven.
