Enmoladas are chicken enchiladas that are cooked with Mexican mole sauce instead of regular enchilada sauce. You’ll be blown away by the combination of spicy, earthy, smoky and aromatic flavors.
Add leftover shredded chicken and some cheese to corn tortillas.
Spread some leftover mole sauce onto your pan.
Add the tortillas you filled with chicken and cheese to the pan.
Top with additional mole. Then turn on the heat and cook until warm, about 10 minutes.
Add some crema, sesame seeds and cotija cheese, then serve!
Add diced fresh avocado and dig in.
