Creamy chicken enchiladas verdes.
In Spanish, “enchiladas suizas” translates to “Swiss enchiladas.” It’s said this recipe was inspired by a Swiss man who said enchiladas verdes were too spicy. To tone down the heat, the restaurant added cream & melted cheese.
Leftover chicken, tomatillos & a few other ingredients are all you'll need to make enchiladas suizas.
Cook the tomatillos, chiles, onion and garlic, then blend everything together.
Make a creamy sauce with milk, crema and cheese. Then add to the green enchiladas sauce.
Add shredded chicken to warm corn tortillas.
Add the filled tortillas to a pan, then cover with sauce and cheese. Cook on the stove top.
Add chopped fresh cilantro on top.
