Chicken Sorrentino is a chicken recipe made with roasted eggplant, prosciutto, melted Italian cheeses, and marinara sauce. In Italy it’s called “Pollo alla Sorrentina,” which means “Chicken Sorrentino,”
You'll need chicken breasts, eggplant, prosciutto and a few other ingredients to make this recipe.
Roast the eggplant. While it is cooking, sear the chicken breasts in a skillet with a bit of olive oil.
Make a simple marinara sauce. You can also use your favorite storebought sauce.
Layer sauce, chicken breasts, eggplant, and cheese. Then bake for 15 minutes.
Serve chicken sorrentino while the dish is still hot and bubbly!
I like to serve this dish with pasta, but mashed potatoes & rice are other good options!
