Mole con pollo is a traditional Mexican cacao sauce with pre-hispanic origins. It was prepared by grinding dried chiles, seeds, and cacao to prepare “mulli.” The sauce was used to cook wild turkeys in as an offering to the gods.
You'll need a handful of traditional Mexican ingredients for this recipe. There are tons of notes on my blog with helpful info. :)
Briefly cook the chicken pieces to brown the outsides.

Place them in hot water for 15 min.
Fry the tortillas with crushed galletas Maria.
Cook the onion, garlic and spices. Add the tomatoes.
Blend the chiles, aromatics, fried tortillas and galletas.
Add the chocolate, then stir until the chocolate has completely melted.
Add the chicken and simmer for 1-2 hours. The flavor will be incredible!
Serve with Mexican rice, crema and a sprinkle of sesame seeds. So good!
