Cook the Beef. In a skillet over medium heat, warm the olive oil. Add the ground beef and cook, breaking it apart with your spoon, until it is browned. Make a space in the center of your skillet, then add the garlic, herbs and spices. Stir constantly until fragrant, about 1 minute.
Add Tomato Sauce and Broth. Add the tomato sauce and vegetable broth. Stir well to combine. Reduce heat to low and simmer until most of the liquid has evaporated and you have a thick, saucey taco mixture.
Warm Tortillas. While the taco meat is finishing up, warm your tortillas. I generally prefer corn tortillas, but small flour tortillas also work well.
Serve with Your Favorite Fixings. When the meat is done, spoon meat down the center of each tortilla and add your favorite fixings. There are a lot of options here: coleslaw greens, salad greens, cheese, salsa, diced avocado, you name it!
