These homemade Cosmic Brownies are rich and chewy brownies covered with delicious fudgy frosting and rainbow sprinkles! 

Ingredients

For the Brownies

  • 1 1/2 sticks unsalted butter, melted
  • 1 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 tablespoon corn syrup
  • 2/3 cup all purpose flour
  • 1 teaspoon cornstarch
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

For the Frosting

  • 1 1/3 cup semi-sweet chocolate chip morsels
  • 1/2 cup heavy cream

For the Topping

  • 1 to 2 tablespoons small rainbow sprinkles or candies

Instructions

Make the Brownies

  1. Preheat the oven to 350°F. Prepare a 8X8 baking pan by measuring and lining the bottom with a cut piece of parchment paper. Lightly mist with cooking spray or brush lightly with oil. Set aside.
  2. In a medium saucepan, melt the butter on low heat. Once all the butter is melted, remove from the heat and pour the melted butter into a large mixing bowl. Add in granulated sugar, brown sugar and cocoa powder. Stir until combined.
  3. In the same mixing bowl, stir in the eggs, vanilla extract and corn syrup. Gently mix in the flour, corn starch, baking powder and salt. The batter should be thick in texture.
  4. Scoop the batter to the prepared baking pan. Gently spread the batter evenly with the back of a spoon. Bake in the preheated oven for 25 minutes. Let cool completely before frosting.

Make the Frosting & Chill

  1. In a small saucepan, heat the heavy cream on low for 2 minutes, or until the cream is slightly steaming. Add in the chocolate chips and remove the pan from the heat. Let it stand for 1-2 minutes or until the chocolate chips are becoming melted and stir until smooth. Pour the chocolate frosting over the prepared brownies and sprinkle with your favorite rainbow candies.
  2. Place the brownie pan in the refrigerator for at least 1 hour to allow the frosting to harden and set. Once the frosting is set, cut with a sharp knife and enjoy!

Notes

Extra brownies can be refrigerated in an airtight container for up to 1 week.
