These fun Cookie Monster cookies are loaded with two different kinds of cookies wrapped up in a soft and chewy, delightfully blue chocolate chip cookie base.
Prep your tools. Preheat the oven to 350°F. Line two oven-size baking trays with parchment paper and set aside.
Prepare the cookies. Break the Oreo cookies and chocolate chip cookies into smaller pieces and set aside.
Beat the butter and sugar. Add butter and sugar to a medium mixing bowl. Cream using an electric hand mixer or a stand mixer fitted with paddle attachment. Mix until smooth and fluffy (approx. 3-5 minutes).
Add egg and vanilla extract. Mix for a few seconds until smooth.
Add the dry ingredients. Add flour, salt, baking soda, baking powder and blue matcha powder. Fold everything with a spatula. At this point, the consistency of the dough should be thick and dense.
Add the chocolate chips and cookies. Using a spatula or a spoon, fold in the chocolate chips. Add chopped cookies and gently combine. At this stage, be careful not to overmix. If the chocolate chip cookies get too crushed, their crumbles can come into contact with the blue matcha powder and create green cookies.
Portion and bake. Using an ice cream scoop, scoop out 1 serving of the dough onto the baking sheet. Repeat with the remaining dough, dropping it a few inches apart. Bake at 350°F for 11-13 minutes. The cookies should still be slightly soft to the touch in the middle when taken out of the oven.
Cool. Leave the cookies to set on the baking tray for a few minutes, then transfer to a cooling rack and let them chill before serving. Enjoy!
